Homemade Granola - DIY!

Granola is a perfect healthy snack for anytime of the day. It’s packed with protein and it satisfies hunger instantaneously!

Get ready, because your house will be infused with the smell of AUTUMN!

Remember that awkward moment when you were sitting in a silent classroom and your stomach grumbled so loud that it was actually embarrassing? Well, that will not happen if you have some nutty granola on hand!

My mamma used to make “Nutty Granola” for me all the time (back in the day). Now that I’m living on my own, I think it’s about time I take snack-making into my own hands. This recipe is really simple. It’s fool proof, I’m telling you! Lots of chopping, but it is totally worth the amount of granola you end up with.

What you’ll need:

  • Almonds, Walnuts, Pecans (raw, unsalted) - 1/2 cup each
  • Pure Maple Syrup - 1/2 cup
  • Ol’ Fashioned Rolled Oats - 3 cups
  • Cran-raisins - 1/2 cup
  • Cinnamon - 1 tsp.
  • Salt - 1/4 tsp.

Procedure:

  1. Pre-heat oven to 300 degrees
  2. Chop up nuts (easy girls…haha)
  3. Combine nuts with pure maple syrup, oats, salt and cinnamon in large bowl
  4. Spread mixture evenly across a lightly buttered cookie sheet
  5. Bake for about 15 minutes, take out cookie sheet and sprinkle cran-raisins in.
  6. Bake for another 15-20 minutes
  7. Let cool, serve with Light n’ Fit Vanilla yogurt, top with fresh fruit and enjoy!

This is the perfect snack that just keeps giving!

Best Restaurant for Brunch in Boulder

Café Aion is a diamond in the rough. It is also my new obsession :)

Breakfast is the most important meal of the day (and my favorite) so I am thrilled about what Café Aion has to offer, which is quality food and a very interesting menu!

Reasons to Love Café Aion:

  1. They serve French Pressed Coffee! (comes with timer and lumps of sugar)
  2. Support the “Farm to Table Movement” (menu changes based on season)
  3. Sustainable & Trendy — serves water in reclaimed wine bottles, uses towels instead of paper napkins
  4. Homemade Sweets (I recommend the Doughnut and Hole)
  5. Unique dishes — Polenta with Poached Eggs and Tomato Ragu.
  6. Pangea Organics luscious foam soap in the bathroom (support local brands!)
  7. It’s conveniently located on The Hill :)

Featured in 5280 magazine as “TOP 25 Best Restaurants”, Café Aion ranks #12

“What chef-owner Dakota Soifer has created in Café Aion, on Boulder’s Hill, is truly special. Here’s a successful restaurant that defies location (i.e., Collegeville), is reasonably priced, and adheres to the farm-to-table movement. Given Soifer’s credentials (years chefing at the Kitchen and San Francisco’s renowned Zuni Café, and a summer cooking for Meadow Lark Farm), it would be easy to reach overkill on greens sourced from this farmer, and beef raised by that rancher. Instead, Soifer focuses on simply turning out “la merenda”—small plates—that are jammed with seasonal flavor and interest. Pile your table with a selection of these tapas, most of which are served on earthenware dishes, and get busy sharing.”
